Experimenting with org in variable pitch mode

Which really only works if the font size is similar and we still have
fixed width for code blocks.

Once I used the [[https://github.com/sabof/org-bullets][org-bullets]] package, but believe we've replaced it with [[https://github.com/integral-dw/org-superstar-mode][org-superstar-mode]], so the following is an improvement, especially with the sub-bullets:
